Crystalline Fructose

Crystalline Fructose is a corn sweetener produced by allowing the fructose to crystallize from a fructose-enriched corn syrup.  The "crystalline fructose" listed as an ingredient comes from cornstarch not fruit.  Crystalline fructose is simply pure fructose in crystalline form. It includes a 99.5% minimum of fructose which is a higher percentage of fructose than what makes up High Fructose Corn Syrup.  This means less can be used to provide the same level of sweetness.
